A large raw salad is so low in calories and hugely filling. I eat a serving bowl (made for 2+ people) for lunch most days.
An average woman who would like to lose weight would only eat three meals of 500 calories per day.
Raw salad vegetables are so low calorie. For example, a medium sized cucumber is only 30 calories. So you’d have to eat nearly 17 cucumbers in one meal to reach 500 calories! It’s impossible to get hungry.
Make a few servings of the salad dressing, so you can use it throughout the week.
Salad Dressing Ingredients

- Ready in 2 minutes
- Make a batch—keeps for 3 days in the fridge
Using all these ingredients makes the dressing taste a lot better. But if you’re in a hurry, you can simply use the soy yoghurt and apple cider vinegar.
- 50ml unsweetened soy yoghurt
- 50ml apple cider vinegar
- 1 Tablespoon Miso paste (alternative ¼ teaspoon salt)
- 1 Tablespoon smooth almond / peanut butter
- 1 teaspoon mustard
- ½ teaspoon onion powder
- ½ teaspoon garlic granules
1. Add a can of beans
Black or Pinto beans are a good choice, as they are highest in protein. Remember to wash them in running water until you can’t see any more bubbles / foam.
2. Chose a fruit
This makes it so much tastier. Our favourites are pineapple, apple, mango, orange. Cut it into small, bitesize pieces.
3. Add a small amount of healthy fat
Chose one of the following (approximately 115 kcals and 10g fat):
- 20g nuts or seeds
- ½ an avocado
- 100g of olives
4. Eat the rainbow
Eat multiple colours of raw salad vegetables to gain the greatest diversity of vitamins, minerals and antioxidants. You can vary it each time. Some of our favourites ingredients include:
- Grated carrot
- Grated red cabbage
- ½ a cucumber
- ½ a celery
- Cherry tomatoes
- 4 small pickled beetroot
- 30g of canned sweetcorn
- 2 Tablespoons of Raw Sauerkraut
Step by Step Instructions
Put all the ingredients in a shaker with a sealed lid.
Shake hard for five seconds. It’s done! Pour over your salad.
